What is the purpose of bitters? Bitters are made from neutral alcohol infused with herbs, spices, fruits, and other botanicals and they were originally introduced to the cocktail scene as a digestif to aid the morning hangover. They help to balance out the flavours of a cocktail (or soda water!) and add a depth of flavour and complexity to a drink that can be hard to describe. They are the missing piece that makes a good cocktail into a great cocktail.
At Dillon's, they take great pride in handcrafting products using copper stills and fresh local ingredients without artificial flavours or colours.
